Both the yogurt marinade and cooking on the grill will give these Lebanese-inspired chicken skewers authentic flavor, but they're great even if you want to skip the grill. We last featured this meal in 2020

Lebanese Chicken Skewers:
  • Onions, medium red - 1, cubed
  • Bell peppers, green - 1, cubed
  • Chicken thighs, boneless and skinless - 1 1/2 lbs, cubed
  • Lemon-Tahini Marinade and Sauce (ingredients listed separately) - 1/2 cup + 1/2 cup
  • Skewers, metal or bamboo - 8
Couscous:
  • Stock, any type - 1 cup (sub water)
  • Salt - 1/4 tsp
  • Butter - 1 Tbsp
  • Couscous, uncooked - 3/4 cup
Lemon-Tahini Marinade and Sauce:
  • Garlic - 2 cloves, chopped
  • Parsley, fresh (opt) - 1 Tbsp, chopped
  • Yogurt, plain or Greek - 3/4 cup
  • Lemon juice - 1/4 cup
  • Tahini - 1 Tbsp
  • Oregano, dried - 1 tsp
  • Salt - 1/2 tsp
  • Cumin, ground - 1/2 tsp
  • Cinnamon - 1/8 tsp
Cucumber Salad:
  • Cucumbers - 12 oz, diced
  • Vinegar, red or white wine - 2 tsp
  • Oil, olive - 1 tsp

  1. Make couscous - Combine stock, salt (portion for couscous), and butter in a saucepan. Cover and bring to a boil. Remove from heat. Stir in couscous and cover with lid. Let stand for ~5 minutes before fluffing with a fork. (Can be done up to 5 days ahead)

  2. Onions / Bell peppers / Garlic / Parsley - Prep as directed. Store separately. (Can be done up to 5 days ahead)

  3. Make marinade / sauce - Combine garlic, parsley (if using), yogurt, lemon juice, tahini, oregano, salt (portion for marinade / sauce), cumin, and cinnamon. (Can be done up to 5 days ahead)

  4. Marinate chicken - (If prepping right before cooking, get grill heating when chicken is nearly finished marinating.) Cube chicken. Tenderize with a fork and combine with first portion of marinade. Marinate for at least 30 minutes and up to 2 days. (Can be done 2 days ahead)

  5. Skewers - If using wooden / bamboo skewers, soak in water for 10 minutes.

  6. Make cucumber salad - Dice cucumbers. Toss with vinegar and olive oil. (Can be done 1 day ahead)

  7. Assemble skewers - Alternate threading onions, bell peppers, and chicken (fold chicken over onto itself if the pieces are uneven) onto skewers. (Using two skewers together can make it easier to flip the skewers as they cook.) (Can be done 1 day ahead)

  2. Add chicken skewers to heated grill and turn to sear on all sides until chicken is cooked through, 5 to 7 minutes total. (Note: Remove a piece of chicken and check it for doneness if unsure.)

This was soooo delicious and so were the leftovers. We are adding this to our rotation of stuff to make. I might even make this for Thanksgiving (I hate Turkey).

I loved this but kids that it was only OK. I did not use skewers and followed others recommendation of separately sautéing chicken from vegetables. The sauce was super yum.

Yummy! I was surprised at how tasty these skewers were! The yogurt marinade was so tasty and the grilled red onion was a delicious complement!

Someone else suggested using peanut butter (tahini is expensive!) and it worked great. I skipped the skewers and used quinoa instead. It was a great bowl! I also deglazed the pan after I was done, which made a great sauce for the quinoa. Everyone ate it!

We both liked this. I let the chicken marinate for 2 days and it was tender and flavorful. I used a TJ grain mix and made some corn for the cucumber hater. I cooked the skewers in the air fryer with the skewer attachment for 20 minutes and they were perfect.
