BBQ Chicken Chopped Salad:
  • Tomatoes, medium - 2, chopped
  • Corn kernels, fresh or frozen - 2 cups
  • Lettuce, romaine - 2 hearts, chopped
  • Green onions - 2 stalks, chopped, green and white parts combined
  • Avocados - 1, cubed
  • Beans, black (14 oz / 397 g) - 1 can, drained and rinsed
  • Slow Cooker BBQ Chicken (leftover from Monday) - ~2 1/2 cups
  • BBQ sauce - for serving (use your favorite store-bought version)
  • Tortilla chips - 4 cups
Ranch Dressing:
  • Green onions - 1 stalk, finely chopped, green and white parts combined
  • Sour cream - 1/4 cup (sub plain or Greek yogurt)
  • Mayonnaise - 2 Tbsp
  • Vinegar, white wine - 1 Tbsp
  • Dill, dried (opt) - 1/4 tsp
  • Garlic powder - 1/4 tsp
  • Sugar, granulated - pinch

Prep

  1. Make ranch dressing - Finely chop green onions (portion for dressing). Whisk together with sour cream, mayonnaise, vinegar, dried dill, garlic powder, and sugar. Season with some salt and pepper. (Can be done up to 5 days ahead)

  2. Tomatoes / Corn kernels / Lettuce / Green onions (portion for salad) / Avocados - Prep as directed. (Note: If using frozen corn kernels, defrost in the microwave. If using fresh corn, slice off kernels and microwave on high just until tender, 1 to 2 minutes.)

  3. Beans - Drain and rinse.

Would have preferred a more southwestern tasting dressing to go with rather than the ranch. But appreciated the ease of the meal and like being able to cook a protein once and use it twice.

I am really not usually a fan of salads but this was amazing. One of my favourite salads ever. The two dressings tasted great together for me, and it worked very well as a packed lunch.

I used vegan sour cream/mayo so the dressing was super thick. I ended up needing to double the seasonings and add a couple tablespoons of water to thin it out a bit. I didn't have green onions so used chives instead. I thought it was weird to put BBQ sauce on as a second dressing, so I just omitted it. I cooked the bell pepper because I don't like them raw. This tasted great!

Packed for lunch at the office. Used green dressing instead of ranch - packed separately. Tried tortilla strips on salad. Leftover BBQ chicken works very well! So good!

We did not enjoy this salad. The BBQ sauce and ranch didn't go together well. Maybe it was my choice of sauce. But the sweetness just wasn't good in a salad.
