Bagel Sandwich with Turkey and Swiss Cheese
with chips / pickles
This summer meal caused quite a stir when we first shared it in 2019, with some loving the simplicity and others declaring it too simple to even need a recipe. It's time to bring back the #bagelgate debate for tonight's dinner!
Smarts: Serve chips on the side, but we wouldn't blame you a bit for adding a few to the sandwich for crunch!
- Onions, medium red - 1/2, thinly sliced
- Tomatoes, medium - 1, thinly sliced
- Bagels, any type - 4, sliced in half
- Turkey, deli-sliced - 1/2 lb
- Cheese, Swiss - 4 slices
- Baby spinach - 2 oz
- Chips - 4 oz
- Pickles, dill (opt) - 4, for serving (sub your favorite type of pickle)
- Mustard, Dijon - 2 tsp
- Honey - 2 tsp
- Mayonnaise - 1/4 cup
Heat oven to 400F / 204C degrees.
Separate bagels and spread out in a single layer on a sheet pan, cut-side up. Top bottom half of each bagel with turkey and then cheese. Bake in the oven until cheese is melted and top half of bagels are lightly toasted, ~10 minutes.
Finish sandwiches by adding spinach, onions, tomatoes, and honey mustard aioli (or set the toppings out and customize sandwiches at the table). Enjoy chips and pickles on the side.
Easy + the fam enjoyed it! We aren’t big Swiss fans so I used havarti. Next time may try pepperjack for a bit of a kick.0 Helpful
Always love this one. Was a super busy day, so glad to have a quick meal. Should have used cheddar for the kid who hates Swiss (forgot about that!) but otherwise everyone was happy.0 Helpful
I’m team #bagelgate. I like this sandwich even if it is more lunch than dinner.0 Helpful
Easy and filling. Great meal for summer.0 Helpful
So quick! I swapped greek yogurt for mayo which works great if you add salt and a touch of lemon juice.0 Helpful
This was great! We skipped the aioli and just did mayo, forgot the red onion and added the pickles to the sandwich. Really delicious and simple.0 Helpful
