Make
-
Bring a small saucepan of water (for the eggs) to a boil. (If the water starts to boil before you are ready to add the eggs, reduce the heat to maintain a low simmer.)
-
While waiting for the water to boil, place a large saute pan over medium heat. Add olive oil, garlic, and spinach with some salt. Saute until spinach is wilted, 2 to 4 minutes. Squeeze lemon juice over top. Transfer spinach to a bowl and cover to keep warm.
-
Wipe out the pan and add cooking oil. Add hashbrowns, spreading them out in a single layer. Season with some salt and pepper. Allow the hash browns to cook on one side until deep golden brown. Continue to cook, flipping with a spatula, until all of the hash browns are golden and crisp, 8 to 12 minutes total.
-
When hash browns are nearly done cooking, bring the water for the eggs back to a boil. Gently add eggs to boiling water and boil for exactly 7 minutes (this should yield cooked whites and runny yolks so adjust the time if you’d like your eggs cooked differently). When eggs are finished, transfer to a colander and run under cool water.
-
Peel eggs.
-
Divide hash browns between serving bowls. Top with spinach, eggs, avocados, and tomatoes. Sprinkle Everything Bagel Seasoning over top and add hot sauce if you’d like. Enjoy!

Yum! We don’t eat eggs so instead we made a tofu scramble with crumbled tofu, paprika, garlic powder, turmeric, and nutritional yeast. Cooked the tomatoes over the stove for a bit as others suggested and covered the bowl with hot sauce. Didn’t have everything bagel seasoning so added some some sesame seeds. Used “southern style” hash browns which pretty much was just little tiny cubes potatoes that we cooked in the air fryer in small batches. We really enjoyed this breakfast-for-dinner treat.

We used hash brown patties vs. loose hash browns and cooked them in the airfryer. Think that saved a lot of mess. Used Penzy sandwich sprinkle because we had it, and that was really good. Overall this was tasty - but no leftovers for the next day! (not the worst thing ever, of course...)
Shredded potatoes were a nightmare in this. They stuck awfully and ruined the pan. I don’t know if frozen hash browns were better but one definitely can’t just sub fresh. I ended up cubing and boiling potatoes. What a mess.
Tasty and simple. It came together quickly. We added some sautéed veggies we had leftover from fajitas and a smidgen of cheese. Everything bagel seasoning elevates it so much. It just add so much flavor.
This was a perfect light dinner. Made fewer eggs (scrambled) and less hashbrowns than called for. Would make the suggested amount if we needed a more filling meal. Came together quickly. Would definitely make again.
This came together easily and was quite tasty. I liked how everyone could customize their bowls. I just used some seasoning salt on top instead of the Everything Bagel seasoning.
