Avocado Sweet Potato ‘Toast’
with smoked salmon / balsamic arugula salad
This is no ordinary avocado 'toast'. Add smoked salmon and serve the whole thing on sliced and roasted sweet potatoes for a substantial meal that you'll want to eat with a knife and fork. We last featured this meal in 2020.
Smarts: We couldn't resist adding the option of sprinkling Everything Bagel Seasoning on top of this dish. This seasoning mix is becoming more widely available and there are plenty of recipes online, but feel free to skip it if you prefer.

Line a sheet pan with parchment paper (this will help to prevent sticking). Spread the sweet potato slices out on the pan in a single layer (use a second pan if needed). Brush the tops of the potatoes with some cooking oil.
Bake sweet potatoes until tender and easily pierced with a fork, 18 to 22 minutes (depending on thickness).
Toss arugula with marinated tomatoes.
Set sweet potato slices out on serving plates. Spread the sweet potatoes with mashed avocado. Top with salmon and season with Everything Bagel Seasoning (if using) and some salt and pepper.
Serve sweet potato ‘toasts’ with salad on the side. Enjoy!
