Brie and Caramelized Onion Burger

The natural sweetness of caramelized onions, the peppery flavor of arugula, and the savory richness of brie go well together, especially when combined on a homemade burger!
Smarts #1: Thinly slice the brie so that it will melt quickly. You can also cook the burgers until nearly done and then top them with brie and slide them under the oven’s broiler to get it really melted. 
Smarts #2: Feel free to fire up the grill for these burgers, but we wrote them to be cooked on the stovetop since you’ll already have the oven on for the fries.

Caramelized Onions:
  • Onions, medium - 2 , thinly sliced
  • Butter - 2 Tbsp
  • Oil, olive - 1 Tbsp
  • Vinegar, balsamic - 1 tsp
  • Brown sugar - 1/4 tsp
  • Salt - 1/4 tsp
Brie and Caramelized Onion Burger:
  • Beef, ground - 1 1/2 lbs
  • Worcestershire sauce - 2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Cheese, brie - 4 oz , thinly sliced
  • Hamburger buns - 4
  • Mustard, Dijon (opt) - 2 tsp
  • Baby arugula - 2 oz
Fries:
  • Frozen fries, regular or sweet potato - 1 lb
  • Dipping sauce, like ketchup (opt) - for serving

Prep

  1. Onions - Thinly slice onions. (Can be done up to 5 days ahead)

  2. Caramelize onions - Heat a frying pan over medium heat. Add butter and oil. When butter melts, add onions. Saute for ~10 minutes, until tender but still crunchy. If it looks like the onions or pan will burn at any point, add a splash of water. Stir in vinegar, brown sugar, and salt (portion for onions). Cook until golden and tender, 10 to 15 minutes more. (Can be done up to 5 days ahead)

  3. Make burger patties - Mix together beef, Worcestershire sauce, salt (portion for burger), and pepper. Form into 1” / 2.5 cm thick patties and make a depression in the center with your thumb (this will help the patties to retain an even thickness as they cook). (Can be done 1 day ahead)

  4. Brie - Slice brie.

Make

  1. Heat oven according to instructions for fries. Spread fries out on a sheet pan and bake according to package directions.

  2. If onions were made ahead and are cold, warm them briefly in the microwave (just to take the chill off).

  3. When fries are nearly finished cooking, heat an oven-safe grill pan or skillet over high heat. Brush with some oil. Add burger patties to heated pan and cook on one side until grill marks appear, 2 to 3 minutes. Flip burgers and top with brie slices.

  4. Continue cooking burger patties until brie is partly melted and patties are cooked to your liking - 2 to 3 minutes more for medium-rare, 3 to 4 minutes more for medium, 5 to 6 minutes more for well-done. (Note: if the brie is a firm variety that isn't melting easily, cover the pan with a lid or slide the pan briefly under the oven's broiler.)

  5. Toast hamburger buns.

  6. Assemble burgers by spreading the bottom half of the hamburger buns with mustard. Top with arugula and then burger patties with melted brie. Finish with caramelized onions.

  7. Serve burgers with fries and dipping sauce on the side. Enjoy!
