Bunless Carmelized Onion Burger

The natural sweetness of caramelized onions and the peppery flavor of arugula go well together, especially when combined on a homemade burger!
Smarts 1: Feel free to fire up the grill for these burgers, but we wrote them to be cooked on the stovetop since you’ll already have the oven on for the sweet potato wedges.

Caramelized Onions:
  • Onions, medium - 2 , thinly sliced
  • Butter - 2 Tbsp
  • Oil, olive - 1 Tbsp
  • Vinegar, balsamic - 1 tsp
  • Salt - 1/4 tsp
Bunless Carmelized Onion Burger:
  • Beef, ground - 1 1/2 lbs
  • Bragg's / coconut aminos - 2 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Baby arugula - 5 oz
  • Mustard, Dijon (opt) - 2 tsp
Sweet Potato Wedges:
  • Sweet potatoes - 1 1/2 lbs , wedges
  • Oil, cooking - 1 Tbsp

Prep

  1. Sweet potatoes - (If prepping right before cooking, get sweet potatoes sliced and cooking before continuing with the rest of prep.) Slice into wedges. (Can be done up to 5 days ahead)

  2. Onions - Thinly slice onions. (Can be done up to 5 days ahead)

  3. Caramelize onions - Heat a frying pan over medium heat. Add butter and olive oil. When butter melts, add onions. Saute for ~10 minutes, until tender but still crunchy. If it looks like the onions or pan will burn at any point, add a splash of water. Stir in vinegar and salt (portion for onions). Cook until golden and tender, 10 to 15 minutes more. (Can be done up to 5 days ahead)

  4. Make burger patties - Mix together beef, aminos, salt (portion for burger), and pepper. Form into 1” / 2.5 cm thick patties and make a depression in the center with your thumb (this will help the patties to retain an even thickness as they cook). (Can be done 1 day ahead)

Make

  1. Heat oven to 400F / 204C.

  2. Toss sweet potatoes with cooking oil and season with some salt. Spread out on a sheet pan.

  3. Transfer sweet potatoes to the oven and bake, shaking the pan a few times while they cook, until tender, ~30 minutes.

  4. If onions were made ahead and are cold, warm them briefly in the microwave (just to take the chill off).

  5. When sweet potato wedges are nearly finished cooking, heat an oven-safe grill pan or skillet over high heat. Brush with some oil. Add burger patties to heated pan and cook on one side until grill marks appear, 2 to 3 minutes. Flip burgers and continue until cooked to your liking - 2 to 3 minutes more for medium-rare, 3 to 4 minutes more for medium, 5 to 6 minutes more for well-done. 

  6. Spread arugula out on serving plates. Top with burger patties. Spread mustard and caramelized onions over top of patties. Enjoy sweet potato wedges on the side.
