This Mediterranean chicken bake is beyond easy and full of delicious Mediterranean flavors. This is an updated version of a recipe we featured in 2015.
Smarts: Assemble the pan ahead of time and just pop it into the oven when ready.

Mediterranean Chicken Bake:
  • Prosciutto - 8 slices , chopped
  • Artichoke hearts (14 oz / 397 g) - 1 can , drained, rinsed, and chopped
  • Tomatoes, medium - 2 , chopped
  • Chicken breasts, boneless and skinless - 1 lb , sliced into strips
  • Garlic powder - 1 tsp
  • Basil, dried - 1/2 tsp
  • Oregano, dried - 1/2 tsp
  • Capers (opt) - 1 1/2 Tbsp , drained and rinsed
  • Vinegar, balsamic - 1 Tbsp
  • Oil, olive - 1 1/2 Tbsp
Green Salad with Grapes:
  • Vinegar, red or white wine - 1 1/2 Tbsp
  • Mustard, Dijon - 1 1/2 tsp
  • Oregano, dried - 1/4 tsp
  • Honey - 1/4 tsp
  • Oil, olive - 3 Tbsp
  • Grapes - 1 cup , halved
  • Mixed greens - 8 oz
  • Pistachios, shelled - 1/4 cup (sub chopped walnuts)

Prep

  1. Make vinaigrette - (If prepping right before cooking, get oven heating first.) Whisk together vinegar, mustard, oregano (portion for salad), and honey. Add olive oil (portion for salad) while whisking. Season with some salt and pepper. (Can be done up to 5 days ahead)

  2. Prosciutto / Artichokes / Tomatoes - Prep as directed. (Can be done up to 3 days ahead)

  3. Chicken - Slice and place into a baking pan. Season with garlic powder and some salt and pepper. Tenderize with a fork. (Can be done up to 1 day ahead)

  4. Assemble chicken bake - Toss prosciutto, artichokes, and tomatoes with basil, oregano (portion for chicken bake), capers, balsamic vinegar, and olive oil (portion for chicken bake). Spoon over chicken. (Can be done up to 1 day ahead)

  5. Grapes - Slice in half.

Make

  1. Heat oven to 425F / 218C.

  2. Bake chicken 12 to 16 minutes or until cooked through (165F / 74C degrees).

  3. Toss mixed greens, grapes, and pistachios in vinaigrette until dressed to your liking.

  4. Serve chicken with salad on the side. Enjoy!
