  • Onions, medium - 1 , diced
  • Garlic - 4 cloves , minced
  • Spinach - 5 oz , roughly chopped
  • Ham - 6 oz , chopped
  • Oil, cooking - 1 1/2 Tbsp
  • Frozen peas - 1 1/2 cups
  • Frozen corn - 1 cup
  • Rice, cooked - ~2 cups
  • Soy sauce, low-sodium - 1 1/2 Tbsp

Prep

  1. Onions / Garlic - Prep as directed. Store in the same container. (Can be done up to 5 days ahead)

  2. Spinach / Ham - Prep as directed. Store in separate containers. (Can be done up to 3 days ahead)

Make

  1. Heat a wok with cooking oil over medium-high heat. Add onions and garlic and saute aromatics for ~1 minute. Add ham and saute for another 3 to 4 minutes.

  2. Add frozen peas and corn and saute until liquid is cooked off and vegetables are starting to brown and sizzle in the bottom of the pan. Stir in rice and soy sauce and cook until rice is heated through, 3 to 5 more minutes. Fold in spinach and take off heat when everything is cooked through. Taste and season with salt and pepper and enjoy!
