Bagel Veggie Melt:
  • Avocados - 2 , mashed
  • Tomatoes - 1 , sliced
  • Bagels - 4 , halved
  • Cheese, Swiss - 8 slices
Carrots and Hummus:
  • Baby carrots - 8 oz
  • Hummus - 4 oz

  1. Avocado - Mash with a fork and season to taste with some salt.

  2. Tomatoes - Slice tomatoes.

  1. Heat oven to 400F / 204C. Situate top oven rack about 6” / 15cm from the heat source.

  2. Separate bagels and spread out in a single layer on a sheet pan, cut-side up. Toast in the oven for ~4 minutes.

  3. Spread mashed avocado across bagel halves. Layer on tomato and Swiss cheese.

  4. Broil on low for 3 to 5 minutes, until cheese has melted. Keep an eye on your oven at this time to avoid burning.
