Bagel Veggie Melts
with carrots and hummus
- Avocados - 2, mashed
- Tomatoes - 1, sliced
- Bagels - 4, halved
- Cheese, Swiss - 8 slices
- Baby carrots - 8 oz
- Hummus - 4 oz
Heat oven to 400F / 204C. Situate top oven rack about 6” / 15cm from the heat source.
Separate bagels and spread out in a single layer on a sheet pan, cut-side up. Toast in the oven for ~4 minutes.
Spread mashed avocado across bagel halves. Layer on tomato and Swiss cheese.
Broil on low for 3 to 5 minutes, until cheese has melted. Keep an eye on your oven at this time to avoid burning.
Enjoy bagel melts with carrots and hummus on the side.
