Smoked Salmon Toast
with seasonal fruit
- Cucumbers - 4 oz, sliced thinly
- Fresh fruit, any mix - 6 cups, chopped
- Sandwich bread, thick sliced - 4
- Arugula - 3 oz
- Lemon juice - 2 Tbsp
- Cream cheese - 8 oz
- Everything Bagel Seasoning (opt) - 2 tsp
- Smoked salmon - 8 oz
Lightly toast sandwich bread in a toaster or preheat oven to 375F. Spread bread out onto sheet pans and toast for 4 to 6 minutes.
Toss arugula with lemon juice.
Spread cream cheese on one side of lightly toasted bread. Sprinkle with Everything Bagel Seasoning. Top with cucumbers, smoked salmon, and arugula.
Enjoy toasts with fruit on the side!
