[Leftover] Ropa Vieja Stuffed Zucchini

Ropa Vieja Stuffed Zucchini:
  • Zucchini, medium - 4 , halved lengthwise
  • Oil, olive - 2 Tbsp
  • Garlic powder - 1 tsp
  • Italian seasoning - 1 tsp
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Ropa Vieja (leftover from Monday) - ~3 cups
  • Red pepper flakes (opt) - 1/2 tsp
Romaine Salad with Honey-Oregano Vinaigrette:
  • Vinegar, red or white wine - 2 Tbsp
  • Mustard, Dijon - 1 tsp
  • Honey - 1/2 tsp
  • Oregano, dried - 1/4 tsp
  • Oil, cooking - 3 Tbsp
  • Cucumbers - 6 oz , chopped
  • Lettuce, romaine - 2 hearts , chopped
  • Tomatoes, cherry or grape - 1 cup , halved

Prep

  1. Make vinaigrette - (If prepping right before cooking, get oven heating first.) Whisk together vinegar, mustard, honey, and oregano. Add cooking oil while whisking. Season with some salt and pepper. (Can be done up to 5 days ahead)

  2. Zucchini - Slice in half lengthwise and then use a spoon to scoop out the center of each zucchini half, leaving ~1/2” / 1.25 cm thick shell on all sides (discard the center you scoop out or save it for another purpose). Check out this video. (Can be done up to 4 days ahead)

  3. Cucumbers / Lettuce / Tomatoes - Prep as directed.

Make

  1. Heat oven to 400F / 204C.

  2. Brush a sheet pan with some cooking oil. Place zucchini halves on pan, cut-side facing up.

  3. Whisk together olive oil, garlic powder, Italian seasoning, salt, and black pepper. Brush onto cut-side of zucchini halves.

  4. Transfer pan to heated oven and bake until zucchini halves are starting to turn tender and golden, 10 to 12 minutes.

  5. Remove zucchini halves from oven and turn on the oven’s broiler.

  6. Warm leftover ropa vieja in the microwave (it doesn’t need to be hot, but just warm enough to work with). Drain off as much liquid as possible so that your zucchini don't get soggy.

  7. Fill zucchini with ropa vieja. Return pan to oven and broil so that the zucchini gets very tender and the flavors come together, ~3 minutes more.

  8. Toss cucumbers, lettuce, and tomatoes in vinaigrette until dressed to your liking.

  9. Remove zucchini from oven and top with red pepper flakes if you'd like. Enjoy with salad on the side.
