Deconstructed Siu-Mai Pork Soup
with mushrooms / Napa cabbage / carrots

Though the flavors of Siu Mai are the inspiration for this soup, it's much more weeknight friendly (and paleo-friendly) than filling and steaming your own Chinese dumplings.
Smarts #1: Siu Mai are often filled with a combination of pork and shrimp, so we've used that combination of proteins here. Feel free to only use one or the other if you can't purchase just the amount needed for the soup.
Smarts #2: We added a simple final seasoning to this soup to give it another dimension of flavor and make it compatible with Whole30, but feel free to skip that element if you prefer.

Deconstructed Siu-Mai Pork Soup:
  • Shrimp, peeled and deveined - 8 oz , chopped
  • Carrots - 8 oz , diced
  • Garlic - 3 cloves , chopped
  • Mushrooms, any type - 8 oz , chopped (look for pre-chopped to save time)
  • Napa cabbage - 12 oz , thinly sliced (this will seem like a lot but will cook down)
  • Green onions - 2 stalks , chopped, green and white parts separate
  • Bragg's / coconut aminos - 1 Tbsp + 1 Tbsp
  • Oil, toasted sesame - 1 Tbsp
  • Sesame seeds, any color (opt) - 1 tsp
  • Oil, cooking - 1 Tbsp
  • Pork, ground - 12 oz
  • Coriander, ground - 1 tsp
  • Stock, any type - 6 cups
  • Fish sauce - 1 Tbsp (look for a W30-compliant brand like Red Boat if needed)
  • Lemon juice - 2 tsp
  • Hot sauce (opt) - for serving

Prep

  1. Shrimp - Defrost shrimp. When shrimp is defrosted, chop it into small pieces.

  2. Carrots / Garlic - Prep as directed. Store separately. (Can be done up to 5 days ahead)

  3. Mushrooms (if not pre-chopped) / Cabbage / Green onions - Prep as directed. Store separately. (Can be done up to 2 days ahead)

  4. Make soup seasoning - Whisk together first portion of aminos, toasted sesame oil, and sesame seeds.

Make

  1. Heat a large Dutch oven or saucepan with cooking oil over medium-high heat. Add pork and saute, breaking it apart as it cooks, until lightly browned, 7 to 9 minutes.

  2. When pork is cooked, stir in mushrooms, carrots, garlic, white parts of green onions, and ground coriander. Cook until fragrant, 4 to 5 minutes.

  3. Pour stock over pork and bring to a simmer. Stir in fish sauce and second portion of aminos. 

  4. Simmer pork and stock until the carrots are nearly tender, ~5 minutes.

  5. Next, stir in cabbage. Bring to a simmer and cook until all of the vegetables are tender. 

  6. Stir chopped shrimp into the soup and cook for a minute or two until it is opaque and cooked through. 

  7. Remove soup from heat and stir in lemon juice.

  8. Taste soup and season with some additional aminos or lemon juice if needed.

  9. Ladle soup into bowls. Drizzle with aminos-sesame oil seasoning and top with green parts of green onions. Serve with hot sauce on the side. Enjoy!
