A frittata is one of our favorite protein-packed weeknight meals and this one gets nutrition and flavor from a filling of spinach and sausage. Serve it with a fresh smoothie on the side.

Spinach and Sausage Frittata:
  • Garlic - 2 cloves , chopped
  • Spinach - 5 oz , chopped
  • Eggs - 8
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Oil, cooking - 1 Tbsp
  • Sausage, any raw and loose variety - 8 oz
Pear and Banana Smoothie:
  • Pears - 2 , chopped
  • Banana - 1
  • Lemon juice - 2 tsp
  • Coconut milk - 1 cup
  • Ice - 1 cup

Prep

  1. Garlic / Spinach - (If prepping right before cooking, get oven heating first.) Prep as directed. Store separately. (Can be done up to 5 days ahead)

  2. Eggs - Whisk together eggs, salt, and black pepper.

  3. Pears - Chop.

  4. Make smoothie - In a blender combine pears, bananas, lemon juice, coconut milk, and ice. Blend until smooth, adding some water or more coconut milk if needed to help everything blend.

Make

  1. Heat oven to 425F / 218C.

  2. Heat a 10.5” to 12” (26 cm to 30 cm) oven-safe skillet over medium-high heat. Add oil and then sausage. Saute, breaking sausage apart, until browned in spots and cooked through, 8 to 10 minutes. 

  3. Add spinach and garlic to pan and saute until spinach is just wilted, 3 to 4 minutes.

  4. Pour eggs over sausage and spinach. Stir to combine ingredients.

  5. Bake frittata for 18 to 25 minutes. (Frittata is done when eggs are set and a knife inserted in the center comes out clean.)

  6. Slice frittata and serve with smoothie. Enjoy!
