Pan-Seared Chicken Breast with Olives and Tomatoes:
  • Onions, medium - 1 , diced
  • Garlic - 2 cloves , chopped
  • Parsley - 1 Tbsp , chopped
  • Chicken breasts, boneless and skinless - 1 lb , halved to thin
  • Tomatoes, diced, regular or fire-roasted (14 oz / 397 g) - 2 cans , drained
  • Capers - 1 Tbsp , drained and rinsed
  • Kalamata olives, pitted - 1/3 cup , drained and chopped
  • Oil, cooking - 2 Tbsp + 1 Tbsp
  • Thyme, dried - 1 tsp
Italian House Salad:
  • Tomatoes, grape or cherry - 1 cup , halved
  • Cucumbers - 6 oz , diced
  • Lettuce, romaine - 1 heart , chopped
  • Vinegar, red wine - 1 1/2 Tbsp
  • Mustard, Dijon - 1/2 tsp
  • Oregano, dried - 1/4 tsp
  • Oil, olive - 2 1/2 Tbsp

Prep

  1. Onions / Garlic / Parsley - Prep as directed. Store separately. (Can be done up to 5 days ahead)

  2. Chicken - Slice in half to thin. Tenderize and season with some salt and pepper. (Can be done 1 day ahead)

  3. Tomatoes (portion for salad) / Cucumbers / Lettuce - Prep as directed and combine.

  4. Diced tomatoes - Drain. 

  5. Capers / Olives - Drain and rinse. Chop olives.

Make

  1. Heat a large skillet with first portion of cooking oil over medium-high heat. Sear chicken on both sides until cooked through, 5 to 8 minutes total. (Cook in batches if needed.) 

  2. Set chicken aside, covered to keep warm.

  3. Return pan to heat and add second portion of cooking oil. To heated oil add onions and saute until very tender, 4 to 5 minutes.

  4. Add garlic and dried thyme and saute for 1 minute more. 

  5. Stir in tomatoes (for chicken), capers, and olives just until warmed through. Spoon tomato sauce over chicken.

  6. In a large salad bowl, whisk together vinegar, mustard, oregano, and some salt and pepper. Add olive oil while whisking. Top with tomatoes (for salad), cucumbers, and lettuce. Wait to toss until right before serving.

  7. Sprinkle parsley over chicken and sauce. 

  8. Serve chicken with salad on the side. Enjoy!
