Hash Brown Frittata with Sausage and Cheese
and fruit salad

Active: 25 Total: 40
Packed with some of our favorite breakfast ingredients, this savory frittata still feels just as at home on the dinner table as it does any other meal of the day.
Smarts #1: If your frozen hash browns are unseasoned, be sure to add some additional salt and pepper as the hash browns cook.
Smarts #2: Dicing the cheese (instead of grating) gives you a pocket of melty cheese in every bite. Feel free to grate it (or buy pre-shredded) though if it will save you time.

Make

  1. Heat oven to 425F / 218C.
  2. Heat a 10.5” to 12” (26 cm to 30 cm) oven-safe skillet over medium-high heat. Add oil and then spinach with some salt. Saute until spinach is wilted, 3 to 4 minutes. Set spinach aside.
  3. Return pan to heat and add sausage. Saute until sausage is golden brown, 5 to 7 minutes.
  4. To sausage, add hash browns. Saute for 5 to 7 minutes until hash browns are broken up and defrosted. If using unseasoned hash browns, be sure to season them at this point with some salt and pepper.
  5. Pour eggs over sausage and hash browns and add in cheese and spinach. Stir to combine ingredients.
  6. Bake frittata for 18 to 25 minutes. (Frittata is done when eggs are set and a knife inserted in the center comes out clean.)
  7. While frittata bakes, chop and combine fruit for fruit salad.
  8. Slice frittata and serve with fruit on the side. Enjoy!

Think I would make this as a scramble or omelet next time.

We used Impossible sausage in a tube - yum! As a family of three, our leftovers will take care of two school-day breakfasts. Don’t hold back on fresh pepper with unseasoned hash browns.

Eggs stuck to the pan, so cleaning after dinner ended up being kind of a pain. Didn’t have a lot of berries, so mixed what we had with some vanilla yogurt and that worked out well. Whole family enjoyed this one.

I really enjoyed this frittata and thought is was more filling than other ones I’ve made. Will definitely make it again.

I subbed half of the eggs for egg whites, and then did hot chicken sausage instead of the sweet apple sausage, and then russet potatoes instead of sweet potato. Turned out well, however I would cook it on a lower temp next time for longer to try to not have such a browned texture on the edges.

This was great - I loved the sweetness the chicken apple sausage added, and it was relatively quick to put together.
