Cucumber Boats with Cashew Cream and Smoked Salmon

Too hot outside to turn on the oven? These bagel-inspired cucumber boats are fresh and don't require any cooking at all.
Smarts #1: Cashew cream is our paleo-friendly cream cheese stand-in. If you have a high speed blender, the cashews should easily blend into a smooth cream. If using a regular blender, you’ll need the cashews to be softer, so soak them in water for 4 hours and then drain well.
Smarts #2: Everything Bagel Seasoning can be found pre-made at spice stores or at some grocery stores like Trader Joe's. You can also make it yourself, skip it, or just add one bagel topping ingredient like poppy seeds or sesame seeds.

Cucumber Boats with Cashew Cream and Smoked Salmon:
  • Onions, red and medium - 1/4 , diced
  • Cucumbers, medium - 4 (look for cucumbers that are about 8 oz / 227 g each)
  • Smoked salmon - 4 oz , chopped
  • Capers - 1 Tbsp , drained and rinsed
  • Everything Bagel Seasoning (opt) - 2 Tbsp
Cashew Cream:
  • Cashews, raw - 1 cup
  • Garlic - 1 clove , peeled
  • Water - 1/2 cup
  • Lemon juice - 2 Tbsp
  • Oil, olive - 2 Tbsp
  • Salt - 1/2 tsp
Lemony Arugula Salad:
  • Lemon juice - 1 Tbsp
  • Mustard, Dijon - 2 tsp
  • Honey - 1/2 tsp
  • Oil, olive - 2 Tbsp
  • Arugula - 6 oz (sub any salad greens)
  • Black pepper - to taste

Prep

  1. Make dressing - Whisk together lemon juice (portion for salad), mustard, and honey (portion for salad). Add olive oil while whisking. Season with some salt and pepper. (Can be done up to 5 days ahead)
  2. Make cashew cream - (See note about soaking cashews ahead of time if not using a high powered blender.) Combine cashews, garlic clove, water, lemon juice (portion for cashew cream), olive oil (portion for cashew cream), and salt in a blender. Blend until smooth and creamy. Taste and add more salt if needed. (Can be done up to 5 days ahead)
  3. Onions - Dice onions. (Can be done 1 day ahead)
  4. Cucumbers - Slice in half lengthwise. Scrape out the center to create space for fillings.
  5. Salmon - Chop or dice salmon into small pieces so that it will fit on the cucumbers.
  6. Capers - Drain and rinse.

  1. Toss arugula with dressing and divide between serving plates. Season with black pepper.
  2. Nestle cucumbers into arugula so that they rest cut-side up. Season the inside of the cucumbers with some salt and pepper.
  3. Fill cucumbers with cashew cream, capers, and onions. Top with salmon and season with bagel seasoning on top. Enjoy!
