If you have a high speed blender, the cashews should easily blend into a smooth cream. If using a regular blender, you’ll need the cashews to be softer, so soak them in water for 4 hours and then drain well. Smarts #2: Everything Bagel Seasoning can be found pre-made at spice stores or at some grocery stores like Trader Joe's. You can also make it yourself, skip it, or just add one bagel topping ingredient like poppy seeds or sesame seeds.
Cucumber Boats with Cashew Cream and Smoked Salmon:

Make dressing - Whisk together lemon juice (portion for salad), mustard, and honey (portion for salad). Add olive oil while whisking. Season with some salt and pepper. (Can be done up to 5 days ahead)
Make cashew cream - (See note about soaking cashews ahead of time if not using a high powered blender.) Combine cashews, garlic clove, water, lemon juice (portion for cashew cream), olive oil (portion for cashew cream), and salt in a blender. Blend until smooth and creamy. Taste and add more salt if needed. (Can be done up to 5 days ahead)
