We featured another portobello burger in 2019, and many community members loved the savory flavor of these mushrooms when served as a burger. This version includes melty cheese and creamy avocados.

Portobello Burger with Cheese and Mashed Avocado:
  • Mushrooms, portobello - 4 , stems removed
  • Avocados - 1 , mashed
  • Lime juice - 1 tsp
  • Hot sauce, any type (opt) - 1 tsp
  • Oil, cooking - 2 Tbsp
  • Cheese, cheddar - 4 slices (sub any variety of sliced cheese)
  • Hamburger buns - 4
Watermelon:
  • Watermelon, small - 1 , sliced into wedges (look for “personal” watermelons that are sized to serve about 4 people)
Chips:
  • Chips, any type - 8 oz

  1. Mushrooms - Remove stems and scrape out gills from mushrooms. (Can be done up to 3 days ahead)
  2. Watermelon - Slice into wedges.
  3. Avocados - Mash avocados with lime juice and hot sauce. Season with some salt and pepper.

  1. Heat grill to 425F / 218C degrees with one side over direct heat and one side over indirect heat. Clean grates and brush with some oil.
  2. Brush portobello mushrooms with oil and season generously with some salt and pepper. Grill mushrooms over high heat until grill marks show on both sides. Move to indirect heat, close grill, and cook until tender, 3 to 5 minutes more. In the last minute of cooking, top with cheese. Toast hamburger buns on grill.
  3. Spread the bottom of the burger buns with mashed avocado. Top with mushrooms.
  4. Serve burgers with watermelon and chips on the side. Enjoy!

  1. Heat oven to 425F / 218C degrees. Line a sheet pan with some foil or brush with some oil.
  2. Spread portobello mushrooms out on a sheet pan. Brush with oil and season generously with some salt and pepper on both sides. Leave them with hollow side facing up.
  3. Transfer mushrooms to oven and roast for 10 minutes. Turn mushrooms (note: If they released moisture while cooking, drain off excess water and use paper towels or dish towels to pat the mushrooms dry). Return mushrooms to oven and continue roasting until tender, 6 to 10 minutes more. In the last two minutes of cooking, add cheese slices on top.
  4. Toast hamburger buns.
  5. Spread the bottom of the burger buns with mashed avocado. Top with mushrooms.
  6. Serve burgers with watermelon and chips on the side. Enjoy!
