with watermelon / chips

Active: 45 Total: 45
We featured another portobello burger in 2019, and many community members loved the savory flavor of these mushrooms when served as a burger. This version includes crispy bacon and creamy avocados.
Smarts: If you can’t find a small watermelon and don't want to buy a large one, buy pre-sliced watermelon or sub another fruit.
Cooking methods: This recipe includes instructions for using the grill or oven. Select your preferred method.

Make

  1. Heat oven to 425F / 218C degrees. Line a sheet pan with some foil or brush with some oil.
  2. Spread portobello mushrooms out on one side of sheet pan. Brush with cooking oil and season generously with some salt and pepper on both sides. Leave them with hollow side facing up. Spread bacon out in a single layer on second side of sheet pan. (Use two sheet pans if needed to prevent crowding.)
  3. Transfer mushrooms to oven and roast for 10 minutes. Turn mushrooms (note: If they released moisture while cooking, drain off excess water and use paper towels or dish towels to pat the mushrooms dry; likewise, if the bacon release a lot of grease, drain off excess grease). Return mushrooms and bacon to oven and continue roasting until mushrooms are tender, 6 to 10 minutes more.
  4. Toast hamburger buns.
  5. Spread the bottom of the burger buns with mashed avocado. Top with bacon and mushrooms.
  6. Serve burgers with watermelon and chips on the side. Enjoy!

We really liked this "burger". Put guac on both sides of the bun and added quite a bit of hot sauce to amp up the flavor since it was a bit lacking.

This was yummy! I grilled the mushrooms. They turned out well. To cut calories I had a salad instead of chips. Will definitely make again.

Nice and light for summer! We used vegan “bacon” which cut down on the calories and met our diet needs. The calories at the bottom of the recipe seemed a little high for the plantain chips, just a heads up!

I really wanted to like this because these mushrooms are so healthy but I did not. The taste was good but I found the texture off-putting, specifically stringy . I did follow the recipe as outlined for the oven - 10 mins followed by removing excess water and then 6 mins and 2 minutes for the cheese to melt and they seemed to be cooked properly. The gills were removed before baking. If anyone knows a reason why the stringiness might have happened, I would welcome your insight and be willing to try this again.
