Prep

  1. Onions / Bell Peppers / Carrots / Sweet potatoes - Prep as directed. Combine onions, bell peppers, and carrots. Store sweet potatoes separately. (Can be done up to 5 days ahead)
  2. Make spice blend - Combine paprika, salt, cumin, garlic powder, oregano, turmeric, and cinnamon. (Can be done up to 5 days ahead)
  3. Sear chicken and aromatics - In a large skillet over medium heat add oil. When oil is shimmering, add chicken drumsticks and sear on all sides until golden brown, seasoning with some salt and pepper as they cook. This should take 8 to 10 minutes. Put drumsticks in the bowl of a slow cooker. To the heated pan, add onions, bell peppers, and carrots with some salt. Saute until starting to soften, 3 to 4 minutes. Stir in spice blend until fragrant, ~2 minutes. Pour first portion of stock into the pan and bring to a simmer, scraping up any browned bits on the bottom of the pan. Scrape aromatics into slow cooker with drumsticks.
  4. Slow cook stew - Add sweet potatoes, second portion of stock, and diced tomatoes (including liquid) to slow cooker. Stir everything to combine. Slow cook on low for 8 to 9 hours or high for 3 to 4 hours.
  5. Peas - Defrost peas.

  1. Heat a Dutch oven with oil over medium heat. Add chicken drumsticks and sear on all sides until golden brown, seasoning with some salt and pepper as they cook. This should take 8 to 10 minutes. Set drumsticks aside, leaving pot over heat.
  2. If the pot looks dry add some additional oil and then onions, bell peppers, and carrots with some salt. Saute until starting to soften, 3 to 4 minutes.
  3. Stir in spice blend until fragrant, ~2 minutes. Pour first portion of stock into the pan and bring to a simmer, scraping up any browned bits on the bottom of the pan.
  4. Stir in second portion of stock, sweet potatoes and diced tomatoes (including liquid) and bring to a simmer. Once simmering, cover with a lid and reduce temperature to a low simmer. Simmer stew, covered, until meat is falling off the drumsticks, 25 to 30 minutes. (Keep an eye on the temperature as the stew simmers and reduce, as needed, to maintain a low simmer.)
  5. When stew is nearly finished cooking, remove chicken drumsticks and transfer to a cutting board. Use a fork to remove and shred meat. (Note: If you prefer, you can also just leave the drumsticks whole and serve them on top of the stew.)

Make

  1. Using the Saute function of an Instant Pot heat oil. Add drumsticks and sear on all sides until golden brown, seasoning with some salt and pepper as they cook. This should take 8 to 10 minutes. Set drumsticks aside, leaving pot on saute function.
  2. If the pot looks dry add some additional oil and then onions, bell peppers, and carrots with some salt. Saute until starting to soften, 3 to 4 minutes.
  3. Stir in spice blend until fragrant, ~2 minutes. Pour first portion of stock into the pot and bring to a simmer, being very sure to scrape up any browned bits on the bottom of the pan.
  4. Turn off Saute function and allow to cool for a minute or two.
  5. Add chicken back into pot. Stir in second portion of stock (reduce liquid by 10-20% to account for lack of evaporation in the Instant Pot) sweet potatoes and diced tomatoes (including liquid).
  6. Close and lock the lid. Set the pressure valve to 'Sealing'. Cook on manual / high pressure for 10 minutes. Let pressure release naturally for 10 minutes and then manually release any remaining pressure.
  7. When stew is finished cooking, leave it on the Warm function and remove the lid. Remove chicken drumsticks and transfer to a cutting board. Use a fork to remove and shred meat. (Note: If you prefer, you can also just leave the drumsticks whole and serve them on top of the stew.)
  8. Stir shredded chicken, peas, and lemon juice into stew. Taste and season with some salt and pepper.
  9. Divide stew between serving bowls and enjoy!
