Dijon Butter Chickpeas
with caesar broccoli / orzo

Active: 45 min Total: 45 min
This method of baking beans and zucchini inside a foil packet helps to flavor both ingredients as they cook and creates a rich sauce to serve over pasta.
Smarts: Be sure the foil packet is sealed tight so that none of the flavorful sauce leaks out during cooking.

Make

  1. Heat oven to 400F / 204C.
  2. Set foil out on a sheet pan. Add beans and zucchini to one half of the foil.
  3. If butter mixture was made ahead, defrost in the microwave until soft. Pour butter over beans and zucchini. Fold foil over and crimp the edges to tightly enclose beans and zucchini.
  4. Toss broccoli with cooking oil. Add it to the same sheet pan as the beans if there is space (or use a second sheet pan).
  5. Roast foil packet and broccoli together until broccoli is tender 15 to 22 minutes (depending on size). At this point, the zucchini in the foil packet should be tender, but you can leave it in the oven for a few more minutes if needed.
  6. Toss broccoli with Caesar dressing. Top with pine nuts.
  7. If orzo was made ahead, reheat in the microwave. Fold in some more olive oil if the pasta seems dry.
  8. Serve beans and zucchini over orzo (be sure to include all of the flavorful butter from the foil packets). Enjoy with broccoli on the side.
