Cajun Sweet Potato ‘Waffles’ with Fried Egg:
- Sweet potatoes - 1 1/2 lbs , grated
- Eggs - 1 + 4
- Oil, cooking - 2 tsp + 2 Tbsp
- Cajun seasoning - 1 tsp (sub Jerk seasoning or any other spice mix of choice)
- Salt - 1/2 tsp (skip if Cajun seasoning includes salt)
Spring Mix Salad with Cucumbers and Apples:
- Mustard, Dijon - 2 tsp
- Vinegar, apple cider - 1 Tbsp
- Lemon juice - 2 tsp
- Oil, olive - 2 1/2 Tbsp
- Apples, any tart variety - 1 , sliced
- Cucumbers - 6 oz , thinly sliced
- Spring mix - 8 oz (sub any salad greens)
Prep
- Make vinaigrette - Whisk together mustard, vinegar, and lemon juice. Add olive oil while whisking. Season with some salt and pepper. (Can be done up to 5 days ahead)
- Apples / Cucumbers / Sweet potatoes - Prep as directed. (No need to peel the sweet potatoes before grating.)
- Make waffle mixture - Whisk first portion of eggs in a mixing bowl. Add grated sweet potatoes, first portion of cooking oil, Cajun seasoning, and salt. Stir well.

Make
- Heat up a waffle iron on medium heat. Spray with nonstick cooking spray or rub with oil (be generous with this to prevent sticking).
- Spoon sweet potato waffle mixture into heated waffle iron (do this in batches until all of the batter has been used). Press the waffle iron closed and cook until potatoes are cooked in the middle and the exterior is golden brown, 7 to 8 minutes. (Note: In testing, we found these cooked best at medium heat, allowing for enough time to cook all the way through while still getting crisp on the outside.)
- While waffles are cooking, heat a nonstick pan with second portion of cooking oil over medium heat. Crack second portion of eggs into heated oil and fry on one side for sunny side-up or flip for over-easy.
- Just before serving, toss together apples, cucumbers, and greens. Add vinaigrette until dressed to your liking.
- Divide waffles between serving plates and top with fried eggs. Season with some salt and pepper. Enjoy salad on the side.
