Bruschetta Toasts with Mashed White Beans:
  • Garlic - 2 cloves , chopped
  • Beans, cannellini or navy (14 oz / 397 g) - 2 cans , drained and rinsed
  • Baguette - 1 , sliced
  • Oil, olive - 2 Tbsp
Balsamic Tomatoes:
  • Shallots - 1 clove , diced
  • Tomatoes, medium - 3
  • Basil, fresh (opt) - 4 leaves
  • Vinegar, balsamic - 1 tsp
  • Oil, olive - 1 tsp
Roasted Broccoli with Green Onions:
  • Green onions - 2 , chopped, green and white parts combined
  • Broccoli - 1 lb , florets
  • Oil, cooking - 1 Tbsp
  • Lemon juice - 2 tsp

Prep

  1. Shallots / Garlic / Green onions / Broccoli - Prep as directed. Store separately. (Can be done up to 5 days ahead)
  2. Make balsamic tomatoes - Chop tomatoes. Chop basil (if using). Combine with shallots, vinegar, and olive oil (portion for tomatoes).
  3. Mash beans - Drain and rinse beans. Transfer to a mixing bowl and use a fork to mash beans with garlic.
  4. Baguette - Slice into rounds.

Make

  1. Heat oven to 400F / 204C.
  2. Toss broccoli with green onions, cooking oil, and some salt and pepper. Spread out on sheet pan and transfer to the oven. Roast broccoli, shaking the pan halfway through cooking, until tender and golden, 20 to 25 minutes.
  3. While broccoli roasts, spread bread out in a single layer on a second sheet pan. Transfer to oven and bake for 5 minutes, until starting to crisp up. Remove bread from oven and flip over to toast the other side. Brush the tops of the bread with olive oil (portion for toasts). Return bread to oven and continue baking until golden brown and crisp.
  4. Spread mashed beans over the tops of the toasted bread rounds.
  5. Squeeze lemon juice over broccoli.
  6. Give balsamic tomatoes a stir and season with some salt and pepper.
  7. Just before serving, spoon balsamic tomatoes over toasts. Serve broccoli on the side. Enjoy!
