BBQ Lentil Sandwiches with Tangy Slaw:
  • Vinegar, apple cider - 2 tsp
  • Vinegar, white wine - 2 tsp
  • Oil, cooking - 2 tsp
  • Sugar - 1/2 tsp
  • Coleslaw mix - 10 oz
  • Lentils, cooked - 3 cups (use pre-cooked lentils or if cooking from dried, use half the amount of dried and prepare according to package directions)
  • BBQ sauce - 3/4 cup
  • Hamburger buns - 4
Butterhead Lettuce Salad with Tomatoes and Cucumbers:
  • Cilantro leaves - 1 Tbsp , chopped
  • Vinegar, apple cider - 1 Tbsp
  • Mayonnaise - 1 Tbsp
  • Mustard, Dijon - 2 tsp
  • Garlic powder - 1/8 tsp
  • Oil, olive - 2 1/2 Tbsp
  • Cucumbers - 6 oz , chopped
  • Tomatoes, cherry or grape - 1 cup , halved
  • Butter lettuce - 5 oz , leaves torn or chopped
Watermelon:
  • Watermelon - ~3 lbs , wedges

Prep

  1. Make salad dressing - Chop cilantro. Whisk together cilantro, apple cider vinegar (portion for salad), mayonnaise, mustard, and garlic powder. Whisk in olive oil. (Can be done up to 5 days ahead)
  2. Make slaw - In a medium bowl, whisk together apple cider vinegar (portion for sandwiches), white wine vinegar, cooking oil, and sugar. Add coleslaw mix and toss until well combined. (Can be done 1 day ahead)
  3. Cucumbers / Tomatoes / Lettuce / Watermelon - Prep as directed.

  1. Combine lentils and BBQ sauce in a microwave-safe bowl. Heat until warmed through, 1 to 2 minutes on high.
  2. Give slaw a stir and season with some salt and pepper.
  3. Toast hamburger buns.
  4. Just before serving, give dressing a stir and season with some salt and pepper. Toss together cucumbers, tomatoes, and lettuce. Add dressing until salad is dressed to your liking.
  5. Serve lentils and slaw in buns. Enjoy watermelon and salad on the side.
