Fresh, light, and packed with flavor, lettuce cups are a great meal any time, but we especially love them during warm weather. You'll just need a few minutes at the stove to throw everything together. Smarts: To serve this meal, set all of the components out at the table and assemble the lettuce cups just before eating. The saucy lentils served in lettuce are messy, but delicious!
Green onions

Lentils, cooked
- 2 1/2 cups
(use pre-cooked lentils or if cooking from dried, use half the amount of dried and prepare according to package directions)

Make Hoisin stir-fry sauce - Combine soy sauce (portion for lettuce wraps), hoisin sauce, vinegar (portion for lettuce wraps), and cornstarch. (Can be done up to 5 days ahead)
Make fried rice sauce - Chop garlic. Combine garlic, soy sauce (portion for fried rice), vinegar (portion for fried rice), and sesame oil. (Can be done up to 5 days ahead)
Lettuce / Green onions - Prep as directed.
Frozen peas and carrots - Defrost in the microwave. Drain off any liquid.

Heat a wok over medium heat. Add cooking oil (portion for fried rice) and then peas and carrots. Saute for 1 minute to heat through.
Pour fried rice sauce over vegetables and saute until sauce is simmering, ~1 minute. Add rice, breaking it apart and stirring to coat in sauce. Continue cooking until rice is heated through.
Set fried rice aside, covered to keep warm, and return wok to heat.
To heated wok, add cooking oil (portion for lettuce cups). Give stir-fry sauce a stir.
Add lentils and Hoisin stir-fry sauce to wok and saute until everything is heated through and sauce has thickened.
Serve lentils in lettuce cups with green onions and peanuts on top. Enjoy fried rice on the side. Serve hot sauce over fried rice (and in lettuce cups) if you’d like.
