Avocado Sweet Potato ‘Toast’
with smoked salmon / balsamic arugula salad

This is no ordinary avocado 'toast'. Add smoked salmon and serve the whole thing on sliced and roasted sweet potatoes for a substantial meal that you'll want to eat with a knife and fork.
Smarts: We couldn't resist adding the option of sprinkling Everything Bagel Seasoning on top of this dish. This seasoning mix is becoming more widely available and there are plenty of recipes online, but feel free to skip it if you prefer.

Avocado Sweet Potato ‘Toast’:
  • Sweet potatoes - 1 lb , 1/2" / 1.3 cm thick slices
  • Smoked salmon - 4 oz
  • Avocados - 2 , mashed
  • Lemon juice - 2 tsp
  • Hot sauce (opt) - to taste
  • Parchment paper - for roasting
  • Everything Bagel Seasoning (opt) - 2 tsp
Balsamic Arugula Salad:
  • Shallots - 1 clove , chopped
  • Parsley - 2 Tbsp , chopped
  • Tomatoes, cherry or grape - 2 cups , halved
  • Vinegar, balsamic - 1 Tbsp
  • Oil, olive - 2 tsp
  • Arugula - 5 oz

Prep

  1. Sweet potatoes / Shallots / Parsley - (If prepping right before cooking, get oven heating before continuing with prep.) Prep as directed. Store separately. (Can be done up to 5 days ahead)
  2. Tomatoes - Halve tomatoes. (Can be done 1 day ahead)
  3. Marinate tomatoes - Combine shallots, tomatoes, parsley, vinegar, and olive oil. (Can be done 1 day ahead)
  4. Salmon - Slice or tear salmon into small pieces that will easily fit on bagel halves.
  5. Avocados - Mash avocados and stir in lemon juice. Season with some salt and pepper. Add hot sauce to taste if you’d like.

Make

  1. Heat oven to 400F / 204C.
  2. Line a sheet pan with parchment paper (this will help to prevent sticking). Spread the sweet potato slices out on the pan in a single layer (use a second pan if needed). Brush the tops of the potatoes with some cooking oil.
  3. Bake sweet potatoes until tender and easily pierced with a fork, 18 to 22 minutes (depending on thickness).
  4. Toss arugula with marinated tomatoes.
  5. Set sweet potato slices out on serving plates. Spread the sweet potatoes with mashed avocado. Top with salmon and season with Everything Bagel Seasoning (if using) and some salt and pepper.
  6. Serve sweet potato ‘toasts’ with salad on the side. Enjoy!
