Dry-Rubbed Chicken and Spinach Salad
with strawberry / mint / feta

Active: 30 min Total: 30 min

The flavorful dry-rubbed chicken on top of this salad was first featured in 2018. Our community loved the chicken so much the first time around, we wanted to find a new way to use it. These spring salads are it!

I liked this salad but also used it as a salad template- a bean a fruit a nut a cheese, etc.

Spinach salad with strawberries is always a favorite in my house. The chicken was flavorful and juicy. Used pecans due to almond allergy. The mint gives it a fresh summery twist.

Yum! This was great, and we are not usually too excited about salad. But this will be a repeat for sure. I added the chicken to some leftover pasta for my non-salad eating kiddo and that got a thumbs up too.

I realized I didn't have any feta, but did have some avocados that were really ripe, so I threw those in instead, and I thought it still worked. The spices on the chicken were so yummy, and this came together pretty quickly

Next time I’ll try another bean. Otherwise, tasty.
