Shrimp Lo Mein:
  • Garlic - 3 cloves , minced
  • Green onions - 3 stalks , chopped
  • Celery - 2 stalks , sliced on a bias
  • Carrots - 1/2 lb , sliced thinly
  • Mushrooms, brown or shiitake - 1/2 lb , sliced
  • Soy sauce, low-sodium - 4 Tbsp
  • Rice vinegar - 1 Tbsp
  • Corn starch - 1 Tbsp
  • Sugar - 1 tsp
  • Water - 1/2 cup
  • Lo mein noodles - 1/2 lb ((substitute linguine or a thicker pasta if you can't find lo mein noodles))
  • Cooking oil - 2 Tbsp
  • Seitan strips - 1 lb
  • Lemon - 1/2 , juice of
  • Hot sauce (opt) - to taste
  • Toasted sesame oil (opt) - 2 Tbsp

Prep

  1. Garlic / Green onions / Celery / Carrots / Mushrooms - Prep as directed. For green onions, keep white and green parts separate. (Can be done up to 3 days ahead)
  2. Make stir-fry sauce - Mix together soy sauce, rice vinegar, corn starch, sugar, and water.
  3. Cook noodles - {Double if making Thursday night's dinner} Bring a saucepan of water to boil. Salt and add noodles. Cook according to package instructions and then drain. (Can be done up to 3 days ahead)

Make

  1. Heat a wok over medium-high heat. Add garlic and white parts of green onions to heated oil, and as soon as you can smell the garlic, add the first of the vegetables.
  2. For stir-frying, you want to add ingredients one type at a time, with the longest cooking ingredients first. In this case, the order is carrots, celery, and then mushrooms. Add them about 2 to 3 minutes apart, with a little bit of salt each time.
  3. Once vegetables are mostly done, add seitan to the pan with noodles and push everything to the side forming a donut in the middle. Stir your sauce and then pour into the donut. When it starts to bubble and thicken, toss everything together. Finish with a squeeze of lemon juice. Then season with more soy sauce, salt, pepper, and hot sauce. Remember different types of soy sauce have really different tastes, so you might need more to really add flavor.
  4. Top with rest of your green onions. You can also drizzle toasted sesame oil over your stir-fry.
