Cajun Tofu Po' Boy

With its totally simple sides and quick prep, this meal will have you dreaming of summer.
Smarts: This Po' Boy was in a meal plan in 2018 and was made with mushrooms. This time we're mixing it up with tofu instead.


Cajun Tofu Po’ Boy:
  • Tofu, extra-firm - 16 oz , 1/2" / 1.3 cm cubes (vacuum-packed preferable)
  • Lettuce, romaine - 1 heart , leaves torn (sub green leaf lettuce)
  • Green onions - 2 stalks , chopped, green and white parts combined
  • Lemons - 1 , wedges
  • Oil, cooking - 1 Tbsp
  • Cajun seasoning - 2 tsp
  • Hoagie buns - 4 (sub hotdog buns)
  • Pickles, sliced or whole (opt) - for serving
  • Chips, for serving - 4 cups
Creamy Cajun Sauce:
  • Mayonnaise - 6 Tbsp
  • Cajun seasoning - 1/2 tsp
  • Garlic powder - 1/2 tsp
  • Mustard, Dijon - 1/2 tsp
  • Pickle juice (opt) - 1/2 tsp (from a jar of pickles)
  • Hot sauce (opt) - 1/2 tsp


  1. Tofu - If tofu is packaged in water, press out liquid first, like in this video. Then slice into 1/2” / 1.3 cm cubes (make sure these are bite-sized so that they will easily fit inside buns). (Can be done 1 day ahead)
  2. Make creamy Cajun sauce - Combine mayonnaise, Cajun seasoning (the portion for the sauce), garlic powder, mustard, pickle juice, and hot sauce. (Can be done up to 5 days ahead)
  3. Lettuce / Green onions / Lemons - Prep as directed.

  1. Heat a skillet or wok over medium-high heat. Add oil and then tofu and saute until tofu is golden brown on the outside, 7 to 8 minutes. Add Cajun seasoning (portion for the tofu) and some salt and saute for 1 minute more.
  2. Toast hoagie / hotdog buns.
  3. Assemble sandwiches by brushing the insides of the rolls with half of the Creamy Cajun Sauce. Add lettuce and then tofu. Drizzle remaining sauce over top and finish with green onions.
  4. Serve sandwiches with lemon wedges to squeeze over top of the tofu. Enjoy with pickles and chips on the side.
