Mexican Fried Rice:
  • Garlic - 4 cloves , minced
  • Broccoli - 1 head , chopped into bite-sized pieces
  • Red pepper - 1 , chopped
  • Peas - 1 cup
  • Leftover cauliflower rice - 2 to 3 cups
  • Cooking oil - 2 Tbsp + 2 Tbsp
  • Cumin - 1/2 tsp
  • Coriander - 1/2 tsp
  • Salt - 1/2 tsp
  • Lime - 1/2 , juice of

Prep

  1. Garlic / Broccoli - Prep as directed. (Can be done up to 3 days ahead)
  2. Red peppers - Chop.
  3. Peas - Warm up in microwave.
  4. Leftover cauliflower rice - Mix with first part of cooking oil.

Make

  1. Heat a wok over medium-high heat. Add in second part of oil and then garlic to heated oil. Once you can smell the garlic, add in broccoli. Toss in wok for ~2 minutes and then add in 1/3 cup (78 ml) of water with a dash of salt. Cook broccoli for 4 to 6 minutes. Then add in red peppers and cook for another 2 to 4 minutes.
  2. Add in leftover cauliflower rice and peas with cumin, coriander, and salt. Toss until everything is warmed through. Finish with lime juice and season to taste with more spices.
