Salmon with Fresh Tomatoes and Pesto
with grilled peaches / zucchini

Active: 45 Total: 45

Inspired by the Italian summer salad with fresh tomatoes and basil, this salmon takes advantage of summer produce at its peak. To keep the dish fresh and light, keep the tomatoes raw and pile them on the salmon just before serving.
Smarts: Any tomatoes will work in this dish (cherry, grape, or any color of heirloom tomatoes) so grab whatever looks best.

Basil Pesto:
  • Pine nuts - 2 Tbsp (sub walnuts or pecans)
  • Garlic - 1 clove , peeled
  • Basil, fresh - 1 1/2 oz
  • Lemon juice - 2 tsp
  • Oil, olive - 3 Tbsp
Salmon with Fresh Tomatoes and Pesto:
  • Tomatoes, medium - 2 , chopped

Pulse until all ingredients are well chopped. With food processor running, drizzle in olive oil until smooth. Season to taste with some salt and pepper. (Can be done up to 5 days ahead)
