Smoky Paprika Shrimp, Mushroom, and Tomato Skewers

Grilling is a little extra work in this recipe but will add great flavor to all components of the dish. If you’re going to be short on time or just prefer to cook indoors, skip the skewers altogether - everything will come together quickly on the stovetop.

Smoky Paprika Shrimp, Mushroom, and Tomato Kebabs:
  • Shrimp, peeled and deveined - 1 lb
  • Skewers, wooden or bamboo - 8
  • Paprika, smoked - 1 tsp
  • Cumin - 1/2 tsp
  • Salt - 1/2 tsp
  • Mushrooms, any button - 12 oz , halved
  • Tomatoes, cherry or grape - 1 cup
  • Oil, cooking - 2 Tbsp
  • Hot sauce (opt) - for serving
Grilled Avocado:
  • Avocados - 2 , halved, pits removed
  • Cilantro - 1 Tbsp , chopped
  • Lime juice - 2 tsp

Prep

  1. Shrimp - (If prepping right before cooking and using a grill, get grill heating before continuing with prep.) Defrost, rinse, and pat dry.
  2. Skewers - If using wooden skewers and planning to cook on the grill, soak in water for 15 minutes to prevent burning.
  3. Make spice mix - Combine paprika, cumin, and salt. (Can be done up to 5 days ahead)
  4. Mushrooms - Slice mushrooms in half. (Can be done up to 2 days ahead)
  5. Assemble skewers - Toss mushrooms, shrimp, and tomatoes in cooking oil and then in spice mix. Thread mushrooms, shrimp, and tomatoes onto skewers (skip the skewers if cooking on the stovetop).
  6. Avocados - Halve avocados and discard pits.
  7. Cilantro - Chop cilantro.

Make

  1. If cooking on the grill: Heat a grill to 400F / 204C.
  2. {grill}: Brush some cooking oil onto grates and onto cut-side of avocados.
  3. {grill}: Place skewers and avocado halves, cut-side down, over direct heat. Avocado halves should have grill marks on them at about the same time that shrimp is cooked through / mushrooms are tender, 4 to 6 minutes for both. (If skewers need a bit longer to cook, move them to indirect heat and continue cooking with the lid closed.)
  4. {stovetop}: Heat a wok or skillet with some cooking oil over medium heat. Add mushrooms, tomatoes, and shrimp. Cook until mushrooms are tender and shrimp are opaque and cooked through, 3 to 5 minutes.
  5. Scoop out avocado and mash with cilantro and lime juice. Season with some salt and pepper.
  6. Serve skewers with mashed avocado. Add some hot sauce to everything if you’d like it spicy. Enjoy!
