Classic Beef Burger Patty over Portobello
with lemon balsamic arugula / fresh fruit salad
Whether celebrating Independence Day today or not, there's always room for a hamburger in the heat of summer. For this paleo-friendly version use a portobello mushroom as a base for the burger patty and top it with fresh, lemony arugula. Fruit salad can give the meal a patriotic touch if you use red and blue berries.

Classic Beef Burger Patty over Portobello:
- Mushrooms, portobello - 4 , stems removed
- Beef, ground and lean - 1 1/4 lbs
- Salt - 3/4 tsp
- Black pepper - 1/4 tsp
Fresh Fruit Salad with Honey:
- Strawberries - 1 pint , quartered (sub any red berry like raspberries or cherries)
- Blueberries - 1 pint
- Honey - 2 Tbsp
Lemon Balsamic Arugula:
- Lemon juice - 1 tsp
- Vinegar, balsamic - 1 tsp
- Mustard, Dijon - 1/2 tsp
- Oil, olive - 2 Tbsp
- Arugula - 4 oz
Prep
- Mushrooms - Remove stems and scrape out gills. (Can be done up to 2 days ahead)
- Make fruit salad - (If prepping right before cooking and using grill, get grill heating before continuing with prep.) Quarter strawberries. Combine with blueberries. Cover and refrigerate until ready to serve. (Can be done 1 day ahead)
- Make patties - Mix ground beef with salt and pepper. Form into 1/2" / 1.3 cm thick patties. (Can be done 1 day ahead)

Make
- Whisk together lemon juice, vinegar, and mustard. Add olive oil while whisking. Pile arugula on top, but wait to toss everything together until right before serving.
- Brush mushrooms with some cooking oil. Season with some salt and pepper.
- If cooking on a grill: Heat grill to 500F / 260C degrees.
- {grill}: Brush grill grates with some oil and then place patties and mushrooms over direct heat. Grill on opposite sides for ~4 minutes each with cover closed and continue cooking until mushrooms are tender and burger patties reach an internal temperature of 165F / 74C degrees.
- If cooking with stovetop: Heat a skillet or grill pan over medium-high heat. Brush pan with some oil and then place patties and mushrooms on heated oil. Cook until mushrooms are tender and patties reach an internal temperature of 165F / 74C degrees, ~5 minutes on each side.
- Right before serving, toss arugula with dressing. Drizzle fruit salad with honey.
- Serve burger patties over mushrooms with arugula piled on top. Enjoy fruit salad on the side.
