with lemon balsamic arugula / fresh fruit salad

Active: 40 min Total: 40 min
Whether celebrating Independence Day today or not, there's always room for a hamburger in the heat of summer. For this paleo-friendly version use a portobello mushroom as a base for the burger patty and top it with fresh, lemony arugula. Fruit salad can give the meal a patriotic touch if you use red and blue berries.

Make

  1. Whisk together lemon juice, vinegar, and mustard. Add olive oil while whisking. Pile arugula on top, but wait to toss everything together until right before serving.
  2. Brush mushrooms with some cooking oil. Season with some salt and pepper.
  3. If cooking on a grill: Heat grill to 500F / 260C degrees.
  4. {grill}: Brush grill grates with some oil and then place patties and mushrooms over direct heat. Grill on opposite sides for ~4 minutes each with cover closed and continue cooking until mushrooms are tender and burger patties reach an internal temperature of 165F / 74C degrees.
  5. If cooking with stovetop: Heat a skillet or grill pan over medium-high heat. Brush pan with some oil and then place patties and mushrooms on heated oil. Cook until mushrooms are tender and patties reach an internal temperature of 165F / 74C degrees, ~5 minutes on each side.
  6. Right before serving, toss arugula with dressing. Drizzle fruit salad with honey.
  7. Serve burger patties over mushrooms with arugula piled on top. Enjoy fruit salad on the side.

Very good and simple! Loved the arugula and vinaigrette. A little more effort than I usually put into avocado toast :) so it was nice to have for dinner.

Enjoyed this more than I expected with the portobello and arugula. Added some garlic and onion powder and red pepper flakes to the ground beef for extra flavor. LOVED the fruit salad with honey and yogurt!

We caramelised some onions with patties otherwise it would've been just the taste of meat. We used curry ketchup more than the ketchup and sprinkled some cajun seasoning on our fries (we like spice lol). Skipped the parfait.

Surprisingly delicious! Avocado toast was really good, the arugula, radish, and pepitas went with the avocado toast so well. The parfaits were good too! I would agree, it doesn't feel quite filling enough for a dinner, but definitely for a lunch.
