with oven fries / fruit parfaits

Active: 40 min Total: 40 min

Whether celebrating Independence Day today or not, there's always room for a cheeseburger in the heat of summer. We couldn't resist keeping this meal classic with baked fries and ketchup on the side. Berry parfaits can give the meal a patriotic touch if you use red and blue berries layered with plain yogurt.

Prep

  1. Assemble parfaits - (If prepping right before cooking get oven and grill (if using) heating before continuing with prep.) Quarter strawberries. In small glasses or bowls (use one per serving), layer parfaits by starting with a thin layer of yogurt, topping it with blueberries, then yogurt, and then strawberries. Continue until all of the yogurt and berries have been used. Cover and refrigerate until ready to serve. (Can be done 1 day ahead)
  2. Make patties - Mix ground beef with salt and pepper. Form into 1/2" / 1.3 cm thick patties. (Can be done 1 day ahead)
  3. Tomatoes / Onions / Lettuce - Prep as directed. Arrange on a serving platter so that everyone can top their burger at the table.

Make

  1. Follow cooking instructions on frozen fries to heat oven and bake fries.
  2. If cooking on a grill: Heat grill to 500F / 260C degrees.
  3. {grill}: Brush grill grates with some oil and then place patties over direct heat. Grill on opposite sides for ~4 minutes each with cover closed and continue cooking until patties reach an internal temperature of 165F / 74C degrees. Add cheese slices to tops of patties in the last 2 minutes of cooking. Buns can be toasted on grill for the last 2 to 3 minutes.
  4. If cooking with oven / stovetop: When fries are nearly finished cooking, heat a skillet or grill pan over medium-high heat. Brush pan with some oil and then place patties on heated oil. Cook patties until they reach an internal temperature of 165F / 74C degrees, ~5 minutes on each side. Add cheese slices to tops of patties in the last 2 minutes of cooking. Toast buns.
  5. Right before serving, top each parfait with honey.
  6. Fill buns with hamburger patties. Let everyone top their cheeseburgers at the table. Serve fries with ketchup on the side. Serve the parfaits right away or save them for a light dessert. Enjoy!

Very good and simple! Loved the arugula and vinaigrette. A little more effort than I usually put into avocado toast :) so it was nice to have for dinner.

Enjoyed this more than I expected with the portobello and arugula. Added some garlic and onion powder and red pepper flakes to the ground beef for extra flavor. LOVED the fruit salad with honey and yogurt!

We caramelised some onions with patties otherwise it would've been just the taste of meat. We used curry ketchup more than the ketchup and sprinkled some cajun seasoning on our fries (we like spice lol). Skipped the parfait.

Surprisingly delicious! Avocado toast was really good, the arugula, radish, and pepitas went with the avocado toast so well. The parfaits were good too! I would agree, it doesn't feel quite filling enough for a dinner, but definitely for a lunch.
