Ginger Salmon Foil Packets
with asparagus / bok choy / carrots

This is one of the easiest ways to cook salmon. Wrap it tightly in a foil packet with sauce to get tender, flaky fish every time.

Sesame Ginger Sauce:
  • Ginger - 1 tsp , grated
  • Garlic - 2 cloves , chopped
  • Stock, any type - 1/4 cup
  • Bragg's / coconut aminos - 1/4 cup
  • Vinegar, rice - 1 1/2 Tbsp
  • Oil, toasted sesame - 1 Tbsp
  • Honey - 1 Tbsp
  • Arrowroot flour - 2 tsp
  • Water - 3 Tbsp
Ginger Salmon Foil Packets:
  • Asparagus - 12 oz , 5" / 13 cm lengths
  • Baby bok choy - 8 oz , halved
  • Cilantro leaves - 2 Tbsp , chopped
  • Foil - for baking
  • Carrots, shredded - 5 oz , look for pre-shredded
  • Salmon - 1 lb
  • Lime juice - 2 tsp

Prep

  1. Asparagus / Bok choy / Ginger / Garlic - If prepping right before cooking, get oven heating first. Prep as directed. Combine asparagus and bok choy in one container. Combine ginger and garlic in another container. (Can be done up to 5 days ahead)
  2. Make sauce - Combine ginger, garlic, stock, aminos, vinegar, toasted sesame oil, and honey in a small saucepan over medium heat. Simmer for 3 minutes to let the flavors develop. Whisk together arrowroot powder and water. Add to sauce and simmer until sauce thickens, ~1 minute. (Can be done up to 5 days ahead)
  3. Cilantro - Chop cilantro. (Can be done 1 day ahead)

Make

  1. Heat oven to 425F / 218C.
  2. While oven is heating, prepare foil packets. Set a large sheet of foil out on a sheet pan (if the foil is thin, use two sheets to prevent the sauce from leaking out during cooking.)
  3. Spread asparagus, bok choy, and carrots in the middle of the foil. Season vegetables with some salt. Rinse and dry salmon and place on top of the vegetables. Season with some salt and pepper.
  4. Fold up the edges of the foil and pour Sesame Ginger Sauce over the fish. Place another sheet of foil on top and cinch both pieces of foil together to enclose the fish and vegetables.
  5. Bake salmon until cooked through and flaky, 25 to 30 minutes (depending on thickness).
  6. Turn on the oven’s broiler. Slice open and pull back the top of the foil packet and broil salmon for 1 to 2 minutes until golden (this will give it a golden brown crust).
  7. Top salmon with cilantro and lime juice.
  8. Serve salmon with vegetables on the side. Enjoy!
