Ginger Salmon Foil Packets
with green beans / carrots / sesame noodles

This is one of the easiest ways to cook salmon. Wrap it tightly in a foil packet with sauce to get tender, flaky fish every time.

Sesame Ginger Sauce:
  • Ginger - 1 tsp , grated
  • Garlic - 2 cloves , chopped
  • Stock, any type - 1/4 cup
  • Soy sauce - 1/4 cup
  • Vinegar, rice - 1 1/2 Tbsp
  • Oil, toasted sesame - 1 Tbsp
  • Honey - 1 Tbsp
  • Cornstarch - 1 Tbsp
  • Water - 3 Tbsp
Ginger Salmon Foil Packets:
  • Green beans - 16 oz , 1/2" / 1.3 cm pieces (sub asparagus)
  • Foil - for baking
  • Carrots, shredded - 5 oz , look for pre-shredded
  • Salmon - 1 lb
  • Sesame Ginger Sauce - 1/3 cup
  • Lime juice - 2 tsp
Sesame Noodles:
  • Noodles, soba - 4 oz
  • Cilantro leaves - 2 Tbsp , chopped
  • Sesame Ginger Sauce - 1/3 cup
  • Sesame seeds, white - 1 tsp

Prep

  1. Green beans / Ginger / Garlic - If prepping right before cooking, get oven heating first. Prep as directed. Store green beans in one container. Combine ginger and garlic in another container. (Can be done up to 5 days ahead)
  2. Make sauce - Combine ginger, garlic, stock, soy sauce, vinegar, toasted sesame oil, and honey in a small saucepan over medium heat. Simmer for 3 minutes to let the flavors develop. Whisk together cornstarch and water. Add to sauce and simmer until sauce thickens, ~1 minute. (Can be done up to 5 days ahead)
  3. Boil noodles - Bring a saucepan of water to a boil. Add soba noodles and cook according to packaged instructions. Soba noodles don’t take long to cook, so keep an eye out. After draining, spread noodles out onto a sheet pan which will keep them from sticking.
  4. Cilantro - Chop cilantro. (Can be done 1 day ahead)
  5. Pre-cook green beans (optional step) - Cooked with the salmon, the green beans in this recipe will still have some crunch. If you like your green beans more tender, microwave them with a splash of water on high for 2 minutes before adding to foil packets.

Make

  1. Heat oven to 425F / 218C.
  2. While oven is heating, prepare foil packets. Set a large sheet of foil out on a sheet pan (if the foil is thin, use two sheets to prevent the sauce from leaking out during cooking.)
  3. Spread green beans and carrots in the middle of the foil. Season vegetables with some salt. Rinse and dry salmon and place on top of the vegetables. Season with some salt and pepper.
  4. Fold up the edges of the foil (to prevent the sauce from leaking out) and pour Sesame Ginger Sauce (portion for salmon) over the fish. Place another sheet of foil on top and cinch both pieces of foil together to enclose the fish and vegetables.
  5. Bake salmon until cooked through and flaky, 25 to 30 minutes (depending on thickness).
  6. When salmon is nearly finished, toss together noodles and Sesame Ginger Sauce (portion for noodles). If you’d like the noodles warm, heat them briefly in the microwave. (The noodles are also good at room temperature.)
  7. Fold cilantro leaves and sesame seeds into noodles. Season with some salt.
  8. Turn on the oven’s broiler. Slice open and pull back the top of the foil packet and broil salmon for 1 to 2 minutes until golden (this will give it a golden brown crust).
  9. Add vegetables to noodles and toss everything to combine. Squeeze lime juice over salmon. Enjoy!
