with cheese / zucchini saute

These easy, flavor-packed sandwiches are sure to be a crowd-pleaser. A quick run under the broiler right before serving gives them a satisfying topping of melty provolone cheese.

Sausage and Bell Pepper Hoagies:
  • Bell peppers, any color - 2, sliced
  • Onions, medium red - 1, sliced
  • Garlic - 2 cloves, chopped
  • Sausage, Italian pre-cooked or smoked - 4 links, sliced
  • Hoagie rolls - 4
  • Butter - 2 Tbsp
  • Italian seasoning - 1 tsp
  • Oil, cooking - 1 Tbsp
  • Cheese, provolone - 4 slices (sub Swiss)
Cajun Zucchini Saute:
  • Zucchini - 1 lb, cubed
  • Oil, cooking - 1 Tbsp
  • Cajun seasoning - 2 tsp
  • Lemon juice - 1/2 tsp

Prep

  1. Bell peppers / Onions / Garlic / Sausage - Prep as directed. Combine bell peppers and onions in one container. Store garlic and sausage in their own containers. (Can be done up to 5 days ahead)
  2. Zucchini - Cube zucchini. (Can be done up to 3 days ahead)

Make

  1. Turn on the oven’s broiler (use the low setting if available). Place an oven rack about 6” / 15cm below the broiler.
  2. Slice open hoagie rolls and place cut-side up on a sheet pan. Soften butter in microwave and combine with garlic and Italian seasoning. Brush seasoned butter over tops of hoagie rolls. Broil hoagie rolls until lightly toasted, 1 to 2 minutes. Set aside.
  3. Heat a skillet or wok over medium-high heat. Add oil (portion for hoagies) and then sausage, peppers, and onions.
  4. Saute until sausage is starting to brown and vegetables are tender, ~6 minutes.
  5. Divide sausage and vegetables between hoagie rolls. Top with cheese.
  6. Return skillet / wok to heat and add oil (portion for zucchini). Saute zucchini until tender, 5 to 6 minutes. Add Cajun seasoning and some salt. Saute for 1 minute more. Squeeze lemon juice over top.
  7. Just before serving, broil sandwiches until cheese is melted and bubbly, 2 to 3 minutes (watch closely to prevent burning).
  8. Serve sandwiches with zucchini on the side. Enjoy!

This was really good. I used havarti cheese and I didn't make the zucchini side so I mixed cajun seasoning into the butter that was brushed on the bread instead because I like spice. They were delicious. I definitely will make these again.

Husband loved the meal. The Cajun zucchinis were good but too spicy for my toddler, and nearly me. I used cooked chicken sausage as that’s what I had. Overall I was very impressed with how quickly everything came together
