A Cajun-inspired spice blend is an easy way to add big flavor the tofu in these tacos. Quick, easy and full of flavor - tacos are one of our favorite go-to weeknight meals.

Cajun Taco Spice Mix:
  • Cajun seasoning - 2 tsp
  • Chili powder - 1 tsp
  • Cumin - 1 tsp
  • Salt - 1/2 tsp
  • Coriander, ground - 1/2 tsp
  • Black pepper - 1/4 tsp
Roasted Cajun Cauliflower:
  • Cauliflower, medium - 1 head , florets
  • Oil, olive - 1 Tbsp
  • Cajun Taco Spice Mix (ingredients listed separately) - 2 1/2 tsp
  • Lime juice - 2 tsp
Cajun Tofu Tacos:
  • Tofu, extra firm - 16 oz , sliced into .5" / 1.25cm cubes (vacuum-packed preferable)
  • Cabbage, napa or savoy - 6 oz , finely chopped
  • Oil, cooking - 2 tsp + 1 Tbsp
  • Lime juice - 2 tsp
  • Cajun Taco Spice Mix (ingredients listed separately) - 2 1/2 tsp
  • Avocados - 1 , sliced
  • Cilantro - 1 Tbsp , chopped
  • Tortillas, taco-sized corn or flour - 8
  • Hot sauce (opt) - for serving

Prep

  1. Tofu - Tofu - If tofu is packaged in water, press out liquid first, like in this video. Then slice into 1/2” / 1.25cm thick cubes. (Can be done 1 day ahead)

  2. Make spice mix - Combine Cajun seasoning, chili powder, cumin, salt, coriander, and black pepper. (Can be done up to 5 days ahead)

  3. Cauliflower - Chop cauliflower into florets. (Can be done up to 5 days ahead)

  4. Make slaw - Slice cabbage. Toss with first part of cooking oil and lime juice (portion for the tacos). (Can be done 1 day ahead)

  5. Season tofu - Toss tofu with Cajun taco spice mix (portion for the tacos).

  6. Avocados / Cilantro - Prep as directed.

Make

  1. Heat oven to 425F / 218C.

  2. Toss cauliflower with olive oil. Add Cajun taco spice mix (portion for the cauliflower). Spread cauliflower out on a sheet pan (use two pans if needed to prevent crowding) and roast until golden brown and tender, shaking the pan halfway through cooking, 25 to 30 minutes.

  3. When cauliflower is nearly finished, heat a nonstick pan over medium-high heat. Add second part of cooking oil and then sear tofu cubes on all sides until golden brown, 6 to 8 minutes total.

  4. Squeeze lime juice (portion for the cauliflower) over cauliflower.

  5. Warm tortillas according to package directions.

  6. Season slaw with some salt.

  7. Assemble tacos by filling tortillas with slaw, tofu, avocados and cilantro. Add some hot sauce if you'd like. Enjoy cauliflower on the side.
