Make

  1. Heat oven to 425F / 218C.
  2. Toss cauliflower with olive oil. Add Cajun taco spice mix (portion for the cauliflower). Spread cauliflower out on a sheet pan (use two pans if needed to prevent crowding) and roast until golden brown and tender, shaking the pan halfway through cooking, 25 to 30 minutes.
  3. When cauliflower is nearly finished, transfer tilapia to oven and cook until it flakes easily with a fork, 10 to 15 minutes (depending on thickness).
  4. Squeeze lime juice (portion for the cauliflower) over cauliflower.
  5. Warm tortillas according to package directions.
  6. Season slaw with some salt.
  7. Assemble tacos by filling tortillas with slaw, fish, avocados and cilantro. Add some hot sauce if you'd like. Enjoy cauliflower on the side.

Used ling because it was available and on sale! We doubled the spices, which felt like an extra spicy adventure the first day. Leftovers seemed to settle down a bit, but we also added greek yogurt to help tame the heat. Also doubled the cauliflower because there is never enough cauliflower or broccoli in these recipes.

I found this to be somewhat bland. As a leftover, I added a sriracha-mayo and enjoyed it much more.

Next time I’ll add some kind of sauce to give it a wee more juice.
