Kale, Sausage and Mushroom Soup:
  • Carrots - 10 oz, diced
  • Onions, medium - 1/2, diced
  • Kale, large curly leaf - 3 leaves, stems removed and leaves chopped
  • Mushrooms - 8 oz, sliced (look for pre-sliced to save time)
  • Parsley, fresh - 1 Tbsp, chopped
  • Oil, cooking - 1 Tbsp
  • Sausage, Italian raw - 10 oz
  • Tomato paste - 2 Tbsp
  • Tomatoes, crushed - 1 cup
  • Stock, any type - 2 1/2 cups
Oven Roasted Broccoli:
  • Broccoli - 12 oz, florets
  • Garlic - 2 cloves, chopped
  • Oil, cooking - 1 Tbsp
  • Lemon juice - 2 tsp

Make

  1. Heat oven to 400F / 204C degrees.
  2. Toss broccoli and garlic with oil (portion for the broccoli) and season with some salt. Spread out on a sheet pan. Roast until broccoli is tender and starting to brown in spots, shaking the pan halfway through cooking, ~25 minutes.
  3. While broccoli roasts, heat a Dutch oven over medium-high heat. Add oil (portion for the soup) and carrots and onions. Saute until soft, 3 to 4 minutes. Add sausage. Cook sausage, breaking it apart with a spoon, until starting to brown, 5 to 7 minutes. Drain off any excess oil.
  4. Stir in mushrooms, kale leaves, tomato paste, crushed tomatoes and stock. Bring to a simmer. Simmer for 10 to 15 minutes to let the flavors develop. Season with some salt and pepper.
  5. When broccoli is finished, squeeze lemon juice over top.
  6. Top soup with parsley and serve with broccoli on the side. Enjoy!

Great flavors that I wouldn't have normally put together. There was a bit too much liquid though, I will reduce the amount of stock next time. My son said this is his new favorite dish!
