Sauteed Chard:

  • Green onions (white parts) - 2 stalks, chopped
  • Chard - 1 bunch, leaves torn, stems chopped into 1/2" pieces ((If you really love chard, go for 2 bunches))
  • Cooking oil - 1 Tbsp
  • Lemon - 1/2, juice of

Black Bean and Brown Rice Patties:

  • Green onions (green parts) - 2 stalks, chopped
  • Black beans (14 oz / 397 g can) - 1 can, rinsed and drained ((~2 cups))
  • Leftover brown rice - 2 cups
  • Corn kernels - 1/2 cup
  • Tomato paste - 2 Tbsp
  • Cumin - 1/2 Tbsp
  • Paprika - 1 tsp
  • Salt - 1/2 tsp
  • Cooking oil - 2 Tbsp

Sriracha Mayo:

  • Garlic - 1 clove, minced
  • Mayo - 1/2 cup
  • Lemon juice - 1 tsp
  • Sriracha - to taste ((~1 tsp is a good heat level))

Comment: "Used 2-3 times the spices and added some onion powder, and used way more sriracha than mayo. Made sure to sear the patties well. This was great! Added minced garlic to chard; the chard wasn't that special but complemented the meal nicely. "

Comment: "Went into this one fully expecting for it to be a 2 star, meatless, placeholder. I was very surprised when the patties turned out to be very flavorful and filling when combined with the greens (also flavorful). I cooked 3 corn cobs in the microwave and then only needed the kernels from one for the patties, so the other two became an additional side dish. Make sure to get a good sear with some color on the patties before putting them in the oven, the crisp makes the dish."

Comment: "I'm never buying veggie burgers again! These were awesome. I was concerned about them falling apart due to user reviews so I used an immersion blender to mash up the black beans instead of using a fork. They came out so super pasty I had no trouble at all getting them to stick. They were also really fun to make! Would be a great recipe for kids to do. For the Sriracha Mayo I used light mayo to cut some calories and also added a bit more lemon juice, garlic and added cumin as well. I liked it so much I doubled it and put it in the empty mayo bottle. :-). Would be yummy on a sandwich or grilled fish I think!"
